Wet Feet
The cattails plant fascinates me. Mostly because this wild veggie has wet feet. Its natural habitat seems to be thriving within the edges of bodies of water like lakes, ponds or maybe even rivers.

I found several recipes for this dish that mostly uses cattail shoots but I'm thinking that this basic foundation recipe can be smothered with roasted mushrooms, bask in miso or chipotle, or roasted or baked with a cheesy concoction on top.
WILD RECIPES: Cattail Pasta
INGREDIENTS
- Butter to taste
- Salt, pepper & favorite spices to taste
- 30 - 40 cattail shoots (fibrous outer layer removed, white core reserved)
DIRECTIONS
- Wash core.
- Blanch in boiling water for 5 minutes and fry for 2 minutes with salt, pepper and butter (and your favorite spices or herbs).
- Serve hot and voilà, the pièce the résistance is served!
